Blackened Chicken Sandwhich | Renoulade Sauce

Serves four (4) ppl.


  • Two (2) Two boneless & skinless chicken breasts
  • Duck fat spray
  • Dottie Smoky Kickin Cajun Seasoning, to taste
  • Four (4) pepper jack cheese slices
  • Four (4) hamburger buns
  • Remoulade sauce (see below), to taste
  • Lettuce, shredded
  • Tomatoes, sliced
  • Red onions, sliced
  • Pickles, sliced

Remoulade Ingredients:

  • One (1) cup mayonnaise
  • Two (2) tbsp ground mustard
  • Two (2) garlic cloves, minced
  • Two (2) tsp. prepared horseradish
  • Two (2) tsp. Worcestershire sauce
  • Two (2) tsp. lemon juice
  • Two (2) tsp. Dottie Smoky Kickin Cajun Seasoning
  • One (1) tbsp. parsley, finely chopped
  • One (1) tbsp. hot sauce


  • In a small bowl, mix all remoulade ingredients well and set aside.
  • Place both chicken breasts on a cutting board.  Cut each in half (lengthwise), making a total of four thin chicken breast slices.
  • Lightly spray cut chicken breasts on both sides with duck fat and season with Dottie Smoky Kickin Cajun Seasoning.
  • Place on an oiled cast iron flat top (or skillet) that is on medium-high heat.
  • Prior to being cooked all the way through, place a slice of cheese on each chicken breast to melt.
  • Place remoulade on top and bottom of bun, add lettuce, blackened chicken, tomatoes, red onions and pickles.
