Serves approx. eight (8) ppl.
Ingredients:
- Fifteen (15) garlic cloves, whole
- Two (2) large white onions, cut lengthwise.
- Three (3) lbs. pot roast
- Salt and pepper, to taste
- One (1) pkg. au jus gravy mix
- One (1) pkg. ranch seasoning mix
- One (1) 32 oz beef broth
- One (1) can of 16 oz sweet banana peppers Note: We like to use mild.
- One (1) stick of unsalted butter
- Hoagie rolls
- Mozzarella cheese, sliced
Directions
- Using a cutting board, cut the ends off the garlic cloves, and cut the onions, lengthwise. Set aside.
- Place roast on a cutting board and season all sides (including edges) liberally with salt and pepper.
- Place seasoned roast in a cast iron skillet that is on medium-high heat. Sear all sides (including edges).
- Place onions and garlic at the bottom of a crockpot. Please seasoned roast on top.
- Place au jus gravy and ranch seasoning mix on top of roast.
- Add beef broth and the full can of sweet banana peppers, including juice.
- Top with one stick of butter.
- Close lid and cook on low for 6-8 hours or until probe tender.
- Shred roast in its own juices.
- Place roast, onions and pepper mix on a hoagie roll. Top with mozzarella cheese and broil in oven until golden brown.
Storage Tips
1. Cool Down:
Before storing, allow the roast to cool to room temperature. This helps avoid condensation and moisture buildup when stored in a container.
2. Storage in the Refrigerator:
- Container: Place the leftover roast, along with any sauce or gravy, into an airtight container or a resealable plastic bag. This helps preserve the flavor and prevents odors from affecting other foods in the fridge.
- Storage Time: Store it in the refrigerator for up to 3-4 days.
3. Storage in the Freezer (for longer-term storage):
- Package Properly: If you want to store Mississippi Pot Roast for an extended period, wrap the roast tightly in plastic wrap or aluminum foil. Then, place it in a freezer-safe, airtight container or a freezer bag to prevent freezer burn.
