Steak Pinwheel

Serves approx. 4 ppl. 

Ingredients:

  • 1.5 lb. flank steak 
  • 1 1/2 cups spinach leaves, washed
  • 1/2 medium red onion, diced
  • 1 1/2 cups portobello mushrooms, chopped
  • Seven (7) sun dried tomatoes, chopped
  • One (1) cup fetta cheese, crumbled

Directions:

  • Set smoker to 250 degrees
  • Place steak on a cutting board and slowly and carefully slice horizontally across most of it, until you make a thin sheet.  Open it up to assure it lays flat. 
  • Season both sides liberally with Val Coffee Steak Rub
  • Cut 4 to 5 pieces of string/twine (amount depends on size of steak) and lay them on the cutting board, parallel to each other
  • Lay flank steak flat, on top of cut string/twine, and layer with spinach leaves, red onions, portobello mushrooms, sundried tomatoes and feta cheese
  • Roll steak and securely tie the string/twine.  Note:  Although the string/twine will most likely burn off while searing, it will allow the pinwheel to stay together while smoking.
  • Smoke until you reach an internal temp of 125 degrees.
  • Quick sear on all sides (approximately 30 seconds)
  • Rest for 10 minutes and cut into 1 inch slices
