Serves approx. 8-10 ppl.
Ingredients:
- One (1) lb. red beans
- Three (3) tbsp. rendered bacon fat or olive oil
- Two (2) green bell peppers, diced
- Two (2) small onions, diced
- Three (3) celery stocks, diced
- Six (6) garlic cloves, minced
- Eight (8) cups chicken stalk
- Two (2) bay leaves
- Two (2) tbsp. Dottie Smoky Kickin Cajun Seasoning (or to taste)
- One (1) smoked ham hock
- One (1) lb. andouille sausage, sliced
- Four (4) cups rice
- Three (3) green onions, chopped (to garnish)
Directions:
- Wash and soak red beans in water for at least eight hours. Water should be at least 4 inches above beans while soaking.
- Add rendered bacon fat or olive oil in a Dutch oven until bubbly.
- Add green bell peppers, onions and celery. Sweat over medium heat (approx. 10 min).
- Add garlic and stir.
- Pour in soaked beans, chicken stock, bay leaves, Dottie Smoky Kickin Cajun seasoning and ham hock.
- Stir, cover and simmer for 2 hours (stirring occasionally)
- Add sliced andouille sausage.
- Remove ham hock, pull meat off the bone, chop and add back into Dutch oven for another 30 minutes.
- Prep rice
- Place a spoonful of rice on bottom of a bowl. Top with red beans and broth.
- Garnish with green onion.
