Cajun Shrimp Boil

Ingredients:

  • Three (3) 3oz Zatarain's seafood-boil seasoning pouches
  • 1/4 cup cayenne pepper
  • 1 1/2 cups kosher salt
  • Three (3) yellow onions, peeled and quartered
  • Six (6) lemons, halved
  • Zest of one (1) lemon
  • Six (6) heads of garlic, whole
  • 2 1/2 lbs small red potatoes (whole and 1 to 2in wide)
  • 3 lbs of beef sausage, cut into 3 inch pieces
  • Six (6) lbs of 21/25 shrimp (shells on and eay peel)
  • Six (6) ears of corn, shucked and cut into 3 inch pieces
  • Zest of one (1) lemon

Directions:

  • Place corn in freezer.
  • Fill a 24-quart pot with 8 quarts of water.  Set over high heat.
  • Add seasoning pouches, cayenne, salt and onions.
  • Squeeze the juice from six lemons into the pot and add wedges.
  • Add whole garlic and bring to a rolling boil.
  • Add potatoes and sausage and let the water return to a boil
  • Turn off the heat and let soak until potatoes are barely tender when pierced with a knife. (approx. 10 minutes)
  • Bring water back to a boil.  Add sausage and shrimp.  Cook for three minutes.
  • Add frozen corn and lemon zest.  Soak for seven minutes.
  • Drain and serve family style.
