Roasted Red Potato Salad

- Five (5) pounds red potatoes, cut into 1-inch cubes
- Two (2) cups of green onions, chopped
- Sixteen (16) bacon strips, cooked and crumbled
- One (1) cup of mayonnaise
- 1 ½ tbsp McCormick, Grill Mates Sweet and Smokey Rub
- Ground black pepper, to taste
- Kosher salt, to taste

- Preheat oven to 400 degrees
- Place cut potatoes in a greased baking pan. Bake uncovered for 25 – 30 min or until tender and golden brown, stirring occasionally.
- Cool for 15 minutes
- Transfer potatoes to a large bowl: add onions, bacon, mayonnaise, Sweet and Smokey Rub, pepper and salt
- Toss to coat
- Cover and refrigerate for several hours, or over night
