Red Chimichurri Sauce

  • Six (6) garlic cloves, peeled
  • Two (2) shallots, quartered
  • 1/2 cup olive oil
  • Two (2) tbs. red wine vinegar
  • 1/2 cup cilantro
  • 1/2 cup parsley
  • One (1) tsp. chipotle powder
  • One (1) tsp smoked paprika
  • One (1) tsp chili powder
  • 1/2 tsp cumin


  • Toss garlic cloves and shallots into a food processor.
  • Pulse until you reach a desired texture (we like ours a little chunky)
  • Add olive oil, red wine vinegar, cilantro, parsley, chipotle powder, smoked paprika, chili powder and cumin.  
  • Blend until desired consistency is reached.
  • Drizzle over main dish or place in a side plate for dipping.
