Cedar Plank Sea Bass

Sea Bass Ingredients:

  • Two (2) cedar planks
  • Four (4) 6oz sea bass fillets, boneless and skinless
  • 3-4 tbsp. olive oil
  • Coy Zesty Garlic and Herb, to taste
  • Dottie Smoky Kickin Cajun, to taste

Compound Butter Ingredients:

  • 1/2 cup softened butter
  • Four (4) sprigs of dill, chopped
  • Zest of one lemon
  • Two (2) cloves of garlic, minced
  • 1/4 tsp. kosher salt
  • 1/4 tsp. cracked black pepper

Compound Butter Directions:

  • In a bowl, add dill, lemon zest, garlic, salt and pepper.
  • Stir well and place on plastic wrap,
  • Form into a round stick of butter and place in refrigerator until time to serve.

Sea Bass Directions:

  • Soak your cedar planks in water for one (1) hour.
  • On a baking sheet, drizzle sea bass with olive oil and rub both sides thurougly.
  • Season with your favorite seasoning.
  • When grill is ready, place cedar planks on grates in indirect heat for five minutes.  Make sure and put the lid on while heating.
  • Turn the cedar planks over and place your sea bass on the heated side.
  • Cook until it reaches an internal temp of 142.  As it rests, it will reach 145.
  • Top with compound butter.
  • Enjoy!
