  • Three (3) cans of fire roasted corn
  • 2/3 cup sour cream
  • 1/2 cup mayo
  • One (1) cup crumbled cotija cheese
  • One (1) tsp. smoked paprika
  • Two (2) tsp. chili powder
  • Two (2) tsp. garlic powder
  • 1/2 cup chopped cilantro
  • 1/2 tsp. kosher salt
  • 1 tsp. pepper
  • Four (4) chopped green onions
  • Juice of one (1) lime


  • In a large bowl, mix corn, sour cream, mayo, cotiga cheese, smoked paprika, chili powder, garlic powder, cilantro, chopped green onions, salt pepper and juice of one lime.
  • Refrigerate until served.
