Cowboy Beans | Smoked Beans

Serves approx. 8 ppl. 

Ingredients:

  • Six (6) slices of bacon cooked and chopped.
  • One (1) lb. breakfast sausage
  • Two (2) lbs. smoked brisket point (optional)
  • One (1) large yellow onion, chopped.
  • Six (6) garlic cloves, minced.
  • Two (2) 28 oz. cans of pinto beans
  • One (1) 16 oz. can of ranch style beans
  • One (1) cup BBQ sauce
  • One (1) tbsp. Val Coffee Steak Rub (or BBQ seasoning of your choice), to taste
  • Two (2) tbsp. brown sugar

Directions:

  • Place bacon on a sheet pan that is lined with aluminum foil.  Bake in a 350-degree oven for approximately 20 minutes.  Set aside.
  • Cook sausage on stovetop over medium high until cooked.  Set aside.
  • Set smoker or oven to 325 degrees Fahrenheit.  
  • Sauté onions until they become translucent.  Add garlic until aromatic (1-2 min) Set aside. Note:  I like to use the same pan that the sausage was cooked in to repurpose the sausage grease and add flavor.
  • Once cooled, chop cooked bacon and set aside.
  • In a large disposable tin pan (9" X13") or oversized skillet, add pinto beans, ranch style beans, bacon, sausage, brisket point (optional), sautéed onions & garlic, BBQ sauce, brown sugar and Val Coffee Steak Rub
  • Cook in smoker or oven at 325 for 1 1/2 hours, stirring every 30 minutes.
  • Serve warm.
