Chicken Parmesan Burger

Recipe serves six (6)

Ingredients:

  • Three tbsp. olive oil
  • Two (2) lbs. ground chicken
  • 5oz. Italian bread crumbs
  • 1/2 cup parmesan, shredded
  • 1 tsp. crushed rosemary
  • 1 tsp. thyme
  • 1 tsp. dried oregano
  • Salt, to taste
  • Pepper, to taste 
  • Four (4) gloves of fresh garlic, minced
  • One (1) 24oz. jar of spaghetti or marinara sauce
  • Six (6) brioche hamburger buns
  • Fresh part-skim mozzarella cheese, sliced
  • Five (5)oz. fresh basil leaves, chopped

Directions:

  • Preheat oven to 350 degrees
  • Add ground chicken, bread crumbs, parmesan, rosemary, thyme, oregano and fresh garlic to a large bowl.  Mix thoroughly with hands and set aside.
  • In a small pot, warm up your favorite marinara or spaghetti sauce.
  • Butter and toast buns on a cast iron skillet.
  • Form chicken mixture into patties, season (we used our Coy Garlic & Herb seasoning, salt and pepper) and place on a cast iron grill.  Grill over medium high heat.  Sear both sides, prior to placing in the oven.  Approximately three (3) minutes, each side.
  • Place patties on a sheet pan, top with marinara or spaghetti sauce and Mozzarella slices.  
  • Bake until you reach an internal temperature of 165 degrees. Rest and top with fresh basil leaves.
