BLT | Fried Green Tomatoes

 Serves four (4) ppl.

Ingredients:

  • 2-3 green tomatoes (depending on how thick you like them)
  • 2 pinches of salt
  • 1 1/2 cups flour
  • 2 tsp. Coy Zesty Garlic and Herb Seasoning
  • Two (2) pinches of salt and pepper
  • Two (2) eggs
  • 1/2 cup buttermilk
  • 2 dashes of hot sauce
  • 1 cup corn meal 
  • 1/2 cup breadcrumbs
  • Peanut oil (enough to fill skilled 1 1/2 inches)
  • 8 slices of bread
  • Remoulade
  • Lettuce
  • Cheddar Cheese

Directions:

  •  Cut tomatoes into 1/4 to 1/2 inch slices and place on a paper towel.  Add salt and set aside. 
  • Place 8 slices of bacon on a baking sheet, season with Coy Zesty Garlic and Herb seasoning and bake at 400 degrees for 10-15 minutes.  Set aside
  • In another bowl, mix flour, Coy Zesty Garlic and Herb Seasoning, salt and pepper.
  • In another bowl, mix eggs, buttermilk and hot sauce.
  • In a small bowl, mix corn meal and breadcrumbs.
  • Pat tomatoes down with another paper towel.
  • Place individual tomato slices in the flour mixture.  Make sure and cover both sides.
  • Dip floured tomato slice in the milk/egg mixture, covering both sides completely.
  • Put sliced tomato into cornmeal/breadcrumb mix.  Cover both sides completely and place on a baking sheet.
  • Pour peanut oil in a large skillet and heat on med/high until it starts to smoke.
  • Place seasoned tomato slices in oil, turn and cook until a golden-brown color is reached.
  • Place on a paper towel to cool.
  • Pat tomatoes down with another paper towel
  • Spread remoulade on two pieces of bread.  Add cooked bacon, lettuce, tomato and cheese.
