Grilled Rainbow Trout

Serves four (4) ppl.


  • Four (4) whole drawn (gutted and scaled) trout
  • Four (4) tbsp. avocado oil
  • Coy Zesty Garlic and Herb Seasoning, to taste
  • Two (2) lemons, 1/4 inch sliced
  • Eight (8) rosemary sprig


  • With a paper towel, dry fish inside and out.
  • Drizzle avocado oil on the entire fish and season generously with Coy Zesty Garlic and Herb Seasoning (see link below).  Make sure and season inside the trout too.
  • Place a rosemary sprig inside the fish cavity.  Top with 2-3 lemon slices and another rosemary strig on top.
  • Tie twine around the body of the fish, holding the lemons and herbs in place.
  • Prep your grill and place fish over direct heat.  Cover and cook for 5 minutes on each side.
  • Remove the twine, rosemary sprigs and lemons. 
  • Debone and drizzle with your remaining lemons.
