Hatch Chile & Cheese Turkey Sliders | Portobello Sliders

Serves four (4).  Two (2) sliders each.


  • One (1) lb. ground turkey
  • One (1) cup Monterey jack cheese, shredded
  • ½ cup breadcrumbs
  • Four (4) oz. can of hatch chiles, chopped
  • Two (2) tbsp. olive oil
  • Sixteen (16) portobello mushrooms, similar in size
  • Arugula, to taste
  • Guacamole, to taste
  • Tomato, to taste


  • Add, shredded cheese, breadcrumbs, and hatch chiles to ground turkey.
  • Combine and form into small sliders and season with Frank All-Purpose BBQ rub.
  • Add olive oil to a cast iron skillet over medium high heat.
  • Cook patties on both sides until you reach and internal temp. of 165 degrees.
  • Remove the stalk and clean you mushrooms with a paper towel.
  • Spray your griddle with oil and cook mushrooms on both sides, using medium-high heat.
  • Assemble with arugula, guacamole, and tomato.
