Chicken Lettuce Wraps with Peanut Sauce

Peanut Sauce Ingredients:
- Three (3) tbsp creamy peanut butter
- One (1) tsp soy sauce
- One (1) tbsp lime juice
- Two (2) tsp brown sugar
- Two (2) tsp chili garlic sauce
- One (1) tsp grated ginger

Chicken Ingredients:
- One (1) tsp sesame oil
- One (1) tsp olive oil
- Two (2) lbs. ground chicken
- 3-5 oz of portobella mushrooms, diced
- One (1) carrot, peeled and diced
- One (1) shallot, minced
- Four (4) cloves of garlic, minced
- One (1) tbsp grated ginger
- ¼ cup hoisin sauce
- Four (4) tsp chili garlic sauce
- One (1) tsp fish sauce
- Two (2) tbsp freshly chopped cilantro
- Salt, to taste
- Pepper, to taste
- Three (3) Green onions, chopped
- Two (2) heads of butter lettuce

- Wisk together peanut sauce, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Wish in 4-5 tbsp water, until desired consistency. Set aside
- Heat sesame oil and vegetable oil in a large skillet over medium high heat. Add ground chicken, mushrooms, carrot and shallot. Cook until meat is browned. Crumble the chicken as it cooks.
- Stir in garlic, ginger, hoisin sauce, chili, garlic sauce and fish sauce until heated through – about 30 seconds.
- Remove from heat and stir in cilantro
- To serve, spoon chicken mixture into the center of a lettuce leaf, drizzle with peanut sauce and garnish with green onions.
